What Happened in First Cour?
In the first cour, we saw the king of Quincies Ywach being revived, and opening a discontinued war of Quincies and the Soul Reapers. They capture the Hueco Mundo and raid Soul Society. In the ensuing battle, Genryusai Shigekuni Yamamoto was killed but Byakuya Kuchiki and other opponents were vanquished and had their Bankai stolen.
Many Zampakto were also destroyed, and then the foreshadowed Squad Zero rescued Byakuya, Renji Abarai, Rukia Kuchiki, and Ichigo from their battles. Though Ichigo Zampakto gets destroyed with the help of Squad Zero, Ichigo tries to retain an Asauchi(blank Zampakto). In the process, he meets Zangetsu and reveals Ichigo Quincy’s origins.
What to Expect in Second Cour?
The next cour will start adapting from manga chapter 541, where Ichigo retains his Zampakto with a new form. The Soul Reapers will raid Wandenreich. Kubo has said that he will include non-canon battle in anime.
Rukia will unleash her Bankai. Many unseen Bankai will be seen in the series too. It is also possible that the next cour will not cover the entire manga and some part of the manga will be left for another season. The final season might be Ichigo vs Ishida arc with both at the peak of their powers.
